Our Story

Fire makes the finest bird.

Each chicken is bathed in island spice, slow-grilled over open flame on volcanic stone, and rested until it falls from the bone. Born in the sun-warmed lanes of Unawatuna, served the way Ceylon has always known best.

  • Fire

Open flame, live grill — every bird meets the fire first.

  • Flavour

Island spice, peri-peri to tamarind — Ceylon on the tongue.

  • Patience

Sous-vide slow, rested tender — good things take their time.
